Camellia sasanqua is one of the best evergreen ornamentals for achieving this goal of privacy but also providing beauty for your garden.
Camellia sasanqua has a more bushy growth habit which makes it ideal for a screen or hedge. It does stay green all year so even when it's not blooming, you have an extraordinary plant to look at.
What makes camellia sasanqua different from some of the other camellias is that this species can tolerate full sun and actually will perform and bloom much better with more sun. The blossoms of Camellia sasanqua range from white to pink to red with varying shades all in between. Where and how to plant

Plant your camellia sasanqua in soil that is moist but well-draining. Make sure that you provide adequate nutrition and moisture, especially in times of drought. To create a living fence or hedge plant your camellia sasanqua 4-5′ apart. In the south, climate zones 8 and 9, fall is the best time to plant.
