2-Liter Ginger Beer Recipe (Fermented, Fizzy, EASY)
Ingredients
- 3/4 cup grated ginger
(fresh or frozen — both work) - 3/4 cup sugar
(white, cane, or light brown) - Juice of 2 lemons
- 6 cups water (divided)
- 1/4 teaspoon active dry yeast
Optional for flavor (choose zero or one):
- 2–3 whole cloves
- 1 cinnamon stick
- 1 tsp vanilla
- A few slices of lime
Instructions
- Make the ginger syrup
- Add 3 cups of water, grated ginger, and sugar to a pot.
- Simmer for 5–10 minutes until sugar dissolves.
- Remove from heat and stir in the lemon juice.
- Optional: add spices and steep while cooling.
- Cool completely
Let it cool to room temperature — yeast dies in hot liquid.
- Add water + yeast
- Strain ginger if you prefer a smoother drink (or leave it in for extra flavor).
- Pour the cooled mixture into a clean 2-liter soda bottle using a funnel.
- Add 3 more cups of cool water.
- Add 1/4 tsp yeast directly into the bottle.
- Cap tightly and shake gently for 3–4 seconds.
Total volume should be around 1.8 liters, perfect for a 2-liter bottle.
- Ferment
- Leave the bottle at room temperature for 12–48 hours.
- Check the bottle every 6–12 hours.
- Once the bottle becomes firm like a new soda bottle, it’s carbonated.
As soon as it’s firm — REFRIGERATE.
Cold stops fermentation and prevents over-carbonation.
- Serve
- Chill well
- Open slowly (it’s fizzy!)
- Enjoy over ice
